Tomato Chutney

My mother is an amazing cook and how ever I try to copy Amma's recipes,there is something left out in the final taste :) 
The kids call it "Ammamma Magic"
But with practice,I will become "Ammamma" in cooking too :)

One time tested jhatpat recipe from my Mom's recipe treasure.

Tomato Chutney/Curry


We need
4 to 5 ripe red tomatoes ,chopped
3 green chillies slit lengthwise
ginger garlic paste 1 tsp or ginger and garlic pounded separately 1tsp
1 tsp sugar or jaggery
1/2 tsp turmeric powder
3/4 tsp to 1 tsp chilly powder
1 spring of curry leaves
1/2 tsp mustard seeds
a few grains of fenugreek seeds[methi]
a big pinch of asafoetida
salt to taste
oil for cooking -close to1 tbsp

Method

Heat oil in a kadhai .Add the mustard seeds,  fenugreek seeds.When they splutter ,add the ginger garlic paste ,curry leaves ,green chillies and asafoetida. Now add the turmeric and chilly powders. Stir and add immediately add the tomatoes,salt and sugar.
Saute for 1 minute on a high flame.Reduce flame to a medium,cook the tomatoes covered till the oil separates.Adjust the seasonings and serve hot with phulkas ,puris,as a bread spread.Stays good in the fridge for 1 week.

Hi, Just made this today with dosa for b'fast. Next time should try adding the uluva (mehtiseeds)too.

I just checked my recipe..I do add methi dana...uluva or fenugreek seeds .:)
