Mississippi Mud Pie



Mississippi Mud Pie
Thanks to Dessert Cart ,I learnt a few recipes of gorgeousness... :)..My daughter calls her [Shraddha Agarwala } the bestest teacher lol...she accompanies me to the baking classes in Bandra and loves each minute.
I have written the recipe in steps as it is the 1st time I have made a pie and I know...steps count!!! I served the pie with a sprinkle of castor sugar....enjoy!!

Recipe
Pastry shell


Flour-one and 3/4 cup
Castor sugar-2 tbsp
Chilled butter-100gms[cut in to small pieces]
Egg yolk-1
Iced water-2tbsp
a pinch of salt

Filling

Butter-150gms
Chocolate-30gms
coco powder-6tbsp sifted
Instant coffee powder-2tbsp
Eggs-3
Castor Sugar 250gms
Soured cream-2tbsp
Golden syrup-3tbsp
Vanilla essence-1tsp

Method
1.Sift the flour,sugar and salt into a bowl.Rub in the butter with your fingertips till it resembles bread crumbs.
2.Blend the yolk and water and mix into the flour mix.Fork it ligtly in..until it sticks together in a soft clump.Make a ball of the dough and wrap in a cling film and set aside in the fridge to chill for 30 mins.
3.Allow the pastry dough to come to room temp and then knead lightly and troll it on a lightly floured surface[with a belan]Use this pasty top line a greased pie tin.
4.Preheat the oven to 180 deg C.
5.FILLING-Gently melt the butter .Remove from heat and add the chocolate,coco powder and coffee,stirring until chocolate has melted.Set aside.
6.Beat the eggs and sugar till creamy.Add the sour cream,golden syrum and vanilla essence.Stir in the chocolate butter mixture.
7.Pour the filling into the pastry shell and bake in the lower 3rd of the oven for 25 to 30 mins.
8.Remove the pie,once cooled.Serve with a scoop of ice cream..
