Aloo baingan...ssimple, tasty and easy

A very simple rcipe that can be made jhatpat...
best ,when you suddenly decide to add a dish to your menu...

Brinjal-small ones 4
Onion-1 big chopped
Green chilly-2
Garlic-3 o 4 cloves chopped
Tomato -2 chopped
Jeera 1/2 tsp
Turmeric powder 1/2 tsp
Chilly powder 1tsp
Chaat masala-a dash
Salt-to taste
Chopped coriander leaves

Cube potatoes and cook in microwave till done.
Cube Baingan and cook in microwave til done...
(I told u it is easy... dint think it would be this easy.. Eh?) 
Heat oil on a Kadhai and splutter some jeera.
Add chopped onions, green chilly and  garlic.
Add turmeric, chilly powder and salt.
Add chopped tomato and cook till mushy.
Add the cooked potato and baingan.
Add a dash of chaat masala and toss. Mix well and check for seasonings.
Cook on low for 3 to 5 mins .
Garnish with chopped coriander leaves and a dollop of ghee ( my special add)
Serve with phulkas
