Chicken Mint Masala





There mustve been times when you were sick of making the same old chicken curry,same aromas emanating from the bored looking cooker ;) ...I do feel so occasionally,,and at that time,i do make overs ;) ....i start thinking chutney curry,curry "recurried"..and the sorts .

well this one is a very easy one ,but let me assure you that this was  most pleasing to the eye and a complete hit for the taste buds. 
The gravy is silky and spicy.Goes well with anything from chapathis,bread,rice,dosa,idli...puttu!!

You will need

1.Chicken -1kg
2.Mint coriander chutney-a few tablespoons[recipe given below]
3.yogurt -1/2 a cup
4.a coarse paste made of ginger ,garlic and green chillies-1 tbsp[or more ;) ]
5.one onion sliced thin
6.Turmeric powder-1/2 tsp
7.chilli powder-kashmiri chilli-1 tsp to 2 tsp
8.chicken masala-[i use everest]-2 tsp
9.dhania powder-1 tsp
10.3 medium tomatoes ground to a paste
11.salt to taste
12.1 tsp of oil[thats itttt]
13.chopped coriander for garnishing

Marinate the chicken in a mixture of the mint chutney, yogurt, the ground paste of green chilly, ginger and garlic,turmeric and salt.
Then fry onions in 1tsp of oil on medium flame in a pressure cooker.Once it turns a golden brown,add all the masala powders mixed in a few tsps of water..Now add the ground tomato and saute.Cook till the tomatoes are nice n mushy[cook covered]
Now add the marinated chicken and mix well.Add water enough to make the gravy you require and cook for 2 whistles.Off and waity for the cooker to cool off.Garnish with chopped coriander and serve hot!

Mint coriander chutney

1 bunch of coriander leaves
1 bunch of mint leaves taken off the stalk
5 to 6 cloves of garlic
green chilly -5
a small pc of ginger
juice from 1 lemon or more[according to taste]
sugar 1 to 2 tsp
salt to taste

Grind all the ingredients except lemon juice ,to a fine paste.Add the lemon juice and check for seasonings .this yummy chutney stays put for 2 weeks in the refrigerator.Slather on sandwiches,serve with paratha or marinate an unsuspecting chicken :)
