Banoffee pie


My favorite desert is Banoffee pie...and it is so super easy.I make the Dulce-de-leche in big batches so the desert is just about arranging the layers.When the flavours of bananas blends in with the creaminess of the caramel ,crunchiness of the pie crust and the richness of the cream..result is firecrackers on the taste bud world!!!


 








We need  
Bananas sliced -3cups
Caramel/ Dulce de leche-from 1 tin of condensed milk [recipe below]
Whipped cream -200 ml or more [depends on how big your serving bowl is]
Digestive biscuits/Marie biscuits-crushed to a powder, approx 2 cups
Butter -melted-1/2 cup


Mix the biscuit powder and the melted butter and transfer it into a baking tray or glass bowl.Press and pack it as a layer.. Refridgerate it for 15 mins.This can be used as a pie crust in many desert pies

Next layer is the caramel this gooey goodness comes over the pie crust made of biscuit powder.

Bananas are next[the layers can be alternated ,in case you have more caramel or bananas left]



End it up with the whipped cream layer.

Dust with cocoa powder[optional].Chill before serving


Dulce de leche
The condensed milk has to be made into a think caramel[Dulce de leche].I have tried 2 methods,both are easy.
1.The method I usually stick to-dunk the unopened can of condensed milk into a cauldron of water and let it boil.Make sure that the water is much above the can,all the time..Reduce heat and keep it on a medium to low flame for 2 to 3 hours.This is a time consuming method ,but the outcome is gooey caramel.I prepare a couple of cans at a time and store them unopened ,for later use.Open the can only after it cools down

2nd Method - easy and fast.We will need 100gms of brown sugar and 100 gms of butter.Melt the butter and sugar in a heavy bottomed saucepan.Stir till the sugar is dissolved.Now add the condensed milk[1 full tin] and stir well .Boil for a minute .One minute should do,sometimes half a minute more. Don't forget to stir constantly. {Cool the caramel before using it as a topping or as a bread spread}
