Stuffed capsicum rings
I got this yummy recipe from a foodie group on fb.
Recipe was shared by Charu.
Her filling was with many vegetables... But I just had some potatoes....So I went ahead with the recipe. ..with just the versatile potato.
Capsicum 4
Potato 2 big ones[boiled and mashed]
Onion-1 chopped
Green Chilly-to taste
Grated raw mango[completely optional]
Jeera-1/4 tsp
Chilly powder 1/2 tsp
Turmeric powder 1/2 tsp
Garam Masala-a pinch
Corn flour 1 tbsp
Chopped coriander leaves
Salt to taste
Method
Cut thick slices of capsicum.
Make the filling...
Mix the mashed potatoes, added chopped onions, chillies, jeera whole, chilly pdr, turmeric pdr, gram masala a pinch, some shavings of raw mango..add some chopped coriander leaves.. . Mash all these up with salt.
Add the corn flour and mix..
Stuff this into the capsicum slices and pack tightly... Cling wrap or wrap tightly with foil and refrigerate for 20mins...i was running short on time,so I skipped this and just kept them in the freezer for 5mins..
Heat oil in a shallow pan and place the rings.
Cook on high for 2 mins.. Slowly flip and cover and cook on low flame for 10 to 15 mins
Serve with onion rings n lemon wedge
This can be served with roi,puri,thepla or can be just has by itself...
