Baingan Bhaja

Big Brinjal-1
Dry masalas-
Chilly Powder 1tsp
Turmeric powder 1/2 tsp
Garam masala 1/2 tsp
Aamchur powder[dry mango powder]-3/4 tsp
Salt to taste
Rice flour -to dust
Two tbsp oil to shallow fry the brinjal discs.
Wash n pat dry the brinjal.
Cut roundels of equal thickness.. Don't make it too thick or too thin.
Soak the roundels in salted water for 15mins.
Take off the water and marinate the roundels in a mix of red chilly powder, turmeric powder, aamchur, garam masala and salt.
Keep aside for 15mins.
Dust with rice flour and shallow fry on medium flame..
Turn over and cook til crispy on both sides.
Pat with a kitchen towel to drain out excess oil...
Serve these divine discs with roti or bread.. Or rice. :)
