Totapuri Mango Achar[recipe from Taste of Mysore]

Totapuri Mango Achar[ recipe from  http://www.tasteofmysore.com/2009/01/totapuri-mango-pickle-instant-pickle.html]

Totapuri's are a personal favorite ...sweet and sour ..tangy. and they so do tickle my taste buds.
I got a super easy recipe from a website..Taste of Mysore...simple and instant achar.

Totapuri Mango-1-cut into even sized pieces
Oil-6 tbsp
Mustard seeds-1 tsp
Fenugreek /methi seeds-1/2tsp
Hing/asafoetida -1 big pinch
Red chilly powder-2 tbsp[increase or decrease as per taste]
Turmeric powder-1tsp
Jaggery-4 tbsp
Salt -to taste

  • Heat the oil in a kadhai.
  • Add the mustard seeds, fenugreek and hing.Once they splutter, add the cut mango pieces.
  • Saute on a low flame till the mango gets cooked.[check with a fork.,if the fork goes into the mango piece easily,it is done]
  • Now add the turmeric,chiily powder,salt and jaggery.Mix well.
  • Stir well and take off heat.
  • Adjust seasonings.Reheat again to get the flavors right[I skipped this step...I just couldn't wait to taste the achar...]
  • Cool and store .
