Idli and Potato Ishtew

Today is a glorious Sunday .Usually our mornings begin late on Sundays, general lazing around is encouraged here...just on Sundays.
Everyone deserves a wee bit of laziness .
Sunday or Monday, lazy or not, rumbling tummies need some fillers ,anyways!!
Today's breakfast needed to be tasty, filling yet easy to make.
I chose to make a family favorite. Idli and Potato Ishtew[our own stew]
This is a light and tasty accompaniment which leaves you smiling ,and wanting for more.

Ishtew can be made with Potato, Tapioca and Mixed vegetables .Though my personal favorite is the Tapioca Ishtew,I used potato today.

To make Ishtew,we need

1/2 kg Potato[boiled and cubed]
3 big onions-sliced7 to 8 green chilly-slit
1/2 inch ginger-sliced
1 tetra pack of coconut milk
1/2 cup of milk
2 tsp coconut oil
few springs of curry leaves
salt-to taste
crushed pepper-optional

Method

  1. Boil the sliced onions, chilly and ginger in a kadai with some salt and 1 cup water.
  2. Cook till the onions are transparent.
  3. Add the boiled and cubed potatoes and mash a couple of pieces.
  4. Add the coconut milk and bring to a boil.Add the 1/2 cup of milk.check for salt .take off heat .
  5. Add the two tsps of coconut oil and the curry leaves[crush the curry leaves with your hands to release the flavours] Add pepper [optional]
  6.  Serve hot with Idli/dosa/chapathi/rice.....Simply divine :)
